SIMPLE VEGETABLE SAMBAAR

Sambaar or sambar is an Indian origin lentil based vegetable stew, which got popularized as a South-Indian cuisine. It is more of an accidental dish by the Maratha ruler Sambhaji, when he tried to make dal curry in absence of his chef. However, Its a nice combination of taste and nutrition. One serving of sambaar contributes 9% of required protein and 6% of carbs along with covers 7% of daily dietary requirement.Thus, makes it suitable for having with any meal of the day.
Preparation time: 10 min cooking time : 20 min
INGREDIENTS (For 1cup of sambaar)
Boiled toor dal,3/4th cup
Tamarind paste, 1 & 1/2 tbsp.
Turmeric powder,1/4 tsp.
Red chilli powder, 1 tsp.
Coriander Powder, 2tsp
Sambaar masala
water
Salt
VEGETABLES NEEDED:
10-12 Pearl onion,8 sliced & 2-4 whole
1 Drumstick,cut into 3inch pieces
3 Baby brinjal,cut into cubes
4 cubed pumpkin
2 okra/ladies finger,chopped into small pieces
1 medium sized tomato, roughly chopped
TEMPERING:
1 tbsp. oil
2 pinch of asafoetida (Hing)
1/2 tsp cumin and mustard seeds
Pinch of fennugreek seeds
2 Red chillies
5-6 curry leaf
PROCEDURE:
Heat a pan and add oil.
Add asafoetida to hot oil.
Now add mustard and cumin seeds,wait till splutters ,then add fennugreek seeds, red chillies and curry leaves.
Add pearl onions,saute and add tomatoes to it.
After tomatoes get mushy add turmeric powder, red chilli and coriander powder, tamarind pupl,de-glaze with some water.
Add veges,saute,cook on low flame for 10 mins.
During this time prepare sambaar masala. (procedure described below)
Add boiled toor dal along with required amount of water.
Add salt,sambaar powder and cook till you get a desired consistency.
* Add 1tsp sugar for hint of sweet-sour taste (optional).
HOW TO PREPARE SAMBAAR MASALA:
Dry roast 1 tablespoon chana dal,1 tablespoon coriander seeds,2 dried red chilies ,1/2 teaspoon cumin seeds,1/2 teaspoon mustard seeds,1 clove in a pan on medium heat until fragrant, around 3 to 4 minutes.
Let cool and then grind to a powder.
Store in an airtight container and use as needed.
*You can also use ready-made sambaar powder available in market but freshly roasted masala is always a treat to taste buds.
STORAGE TIPS:
It can be stored for 2 days in refrigerator but to keep the taste same add some fresh temperings.
It goes well with idli,vada,dosa and rice. Serve steaming hot to enjoy this flavourful recipe.
