VEG-DELIGHT CHAKULI

India being a diversified country, the pattern of food differs from state to state. Chilla/chakuli/pancakes are made across the country and favourites of all. Uttapam is one of the choicest breakfast of South-Indian people which is spongy and crispy with different toppings. Whereas, chakuli is the most preferred pancake of odia people, generally accompanied with curry. Veg delight or piaja/pyaj chakuli is a fusion of both in which batter of chakuli is used with the toppings of uttapam and cooked with a tinge of mustard oil tatse.


INGREDIENTS:


For batter:

  • Black gram, 1cup

  • Raw rice, 2 cup

  • Salt to taste

For topping:

  • Finely chopped onion, 1/2cup

  • Finely chopped capsicum, 1/2 cup

  • Grated carrot, 1/2 cup

  • Grated beet root, 1/2 cup

  • Finely chopped green chillies, (tastewise)

  • Finely chopped coriander and curry leaves

  • Cumin seeds, 1 tbsp.

  • Mustard oil

PROCEDURE :

Batter

  • Soak rice and blackgram for atleast 6-8 hours.

  • Blend it to fine paste.

  • Mix with hand till becomes fluffy.

  • Add salt and leave it over night to ferment.

Other instructions

  • Prepare all the mentioned toppings.

  • Heat a tawa, grease some oil, sprinkle some water to maintain required temperature.

  • Take batter and spread into a slightly thick, round shape.

  • Sprinkle some cumin seeds and add all other mentioned toppings uniformly.

  • once the top starts to cook add oil.

  • cook both the sides.

Serve hot with chutney or ketch-up. Maintain the size according to your requirement.
