MOM'S FAVOURITE DAHI VADA-ALOO DUM

Dahi vada-aloo dum, one of the famous Odia street food and an income source for many-a-people in Odisha. You can find it at each and every corner with vendors carrying big handis (vessels) hanging on both the sides of bicycles, selling these on the streets. As an odia, I can say most of the odia people are fond of this food and those who have been staying away from their home must be craving for this. Though, Dahi vada is a common snack in different parts of India and so as aloo-dum but you will find this rare combination with a touch of Black salt,roasted cumin and red chilli powder only in Odisha. The vadas are comparatively smaller in size and soaked into spiced curd; Served with spicy aloo-dum, guguni (yellow garden peas), chilli paste, chopped onion and cucumber, is an absolute pleasure for all the foodies. I am publishing this post on this special day i.e "Mother's Day" because this is one of the favourite breakfast of my mother as well as my elder sister and both of them are my lifelines. This post is dedicated to both of them.
INGREDIENTS:
Vada :
Soaked urad dal
Salt to taste
oil
Chaas /Buttermilk :
Curd / Plain yogurt – 2 cups
Water – as needed
Green chillies – 3 no ( small)
Mustard seed- 1/2 tsp
Curry leaves – few
Cumin powder – 1/2 tsp
Red chilli powder – 1/2 tsp
Coriander leaves – Few chopped
Black Salt to taste
Aloo Dum:
5 potato Medium Sized
2 onions small, roughly chopped
1 tbsp ginger garlic paste
2 Tomatoes, finely chopped
2 chillies Dry red
1 bay leaf
1 cinnamon stick
1/2 tsp turmeric
1 tsp chili powder Red
1 tsp cumin powder
1 tsp coriander powder
1 tsp chicken masala
1 tsp garam masala
For Ghugni :
Dried Yellow/White peas – 1 cup ( soaked overnight)
Red chilli powder – 1 tsp
Coriander powder – 2 tsp
Turmeric powder – 1/2 tsp
Cumin powder – 1/2 tsp
Garam masala – 1/2 tsp
Oil – 2 tbsp
Salt to taste
water
Toppings and Seasonings :
Onion – 1 no Medium ( chopped)
Coriander leaves – Few ( finely chopped)
Cucumber - 1/2 medium (chopped)
Green chilli paste (grind green chillies, tamarid pulp,salt)
Black salt to sprinkle
Red chilli powder to sprinkle (Roasted)
Cumin powder to sprinkle (Roasted)
PROCEDURE :
For Making Dahi Vada :
Grind soaked urad dal into a thick paste, mix salt to taste and beat the urad dal paste vigorously using your hand till it becomes fluffy. keep for 5-6 hours.
Drop a small piece of batter into the water to know its ready or not. If it floats then consider it as ready, else beat again.
Fry the vadas on medium flame till the they look light golden brown in colour.
Once the vadas are done, let them sit in water for 5-8 minutes.
Buttermilk :
In a big wide container mix curd, water,chopped coriander leaves, black salt,cumin and red chilli powder, Mix.
For tempering buttermilk heat 1 tbsp oil. Add mustard seeds, Curry leaves, split green chilli. When the mustard seeds starts to crackle and the tampering is aromatic switch off the gas. Let it cool down for 5 minutes and then add to curd mixture.
Remove vadas from water and squeeze them in between two palms to drain excess water. Add to curd mixture.
Carefully turn the vadas ones ,so that they are evenly soaked in curd.While the Vadas are soaking in curd mixture we will prepare Aloo Dum.
For Aloo _Dum :
Cut boiled potatoes into cubes, Fry in oil.
Heat 2 tbsp oil, Add cinnamon, dry red chilies, tej patta. Fry till become aromatic. Add chopped Onion and saute till brown in colour.
Add Ginger garlic paste. Saute till the raw smell is gone.
Add turmeric powder, Cumin , coriander powder, red chilli powder and chicken masala. Saute for 5 min.
Add Chopped tomatoes. Cook until the tomatoes are soft and mushy and masala leaves oil.
Add fried potatoes. saute for 6-7 minutes, till the potatoes are nicely coated with the spices and browned. Add water and garam masala.
Bring the curry to a boil, roughly for 10 minutes.
For guguni:
Add mentioned ingredients to yellow peas and pressure cook untill peas leaves there upper layer. The consistency should be thick.
Though it is not the proper way to make guguni but its taste good with dahi vada.

Serve dahi bara, topped with warm Aloo dum, guguni, green chilli paste and garnished with chopped onion, cucumber, sev, coriander leaves. And sprinkle d roasted cumin,red chilli powder and black salt.
