LOW FAT LACHHEDAR RABRI

India is famous across the globe for it's mouth watering cuisine and spices.Even if, we take Indian sweets into consideration, it has created it's own place in Southern-Asian region due to authentic taste and widest range of sugary delicacies. In fact, Indian sweets have their own significance and relevance. None of the Indian festivals are complete without sweets. Rabri may be considered ad the easiest Indian originated desert, prepared with few ingredients but needs attention and time. Not-only, it tastes good but-also, make a great pair with many of other sweets like jalebi, malpua etc. A low fat rabri is a boon for health conscious sweet-toothed people. Thus, makes it an awesome dessert to have on your cheat days.

INGREDIENTS:

  • Toned milk, 1 lit

  • suager-free natura,1 cup

  • All-purpose flour, 1tbs.

  • bread slice

  • Freshly grounded cardamom powder

  • Soaked almonds and pistachio-nuts

PROCEDURE :

  • Take a thick bottomed kadai. Pour milk in it.

  • Cook on high flame till it gets a boil.

  • Lower the flame and begun to heat the milk on a low to medium flame.

  • When the milk starts to froth or form a layer of cream/malai on top,gently move the floating cream layer towards the side and stick it over there.

  • Keep on simmering the milk like this and collecting the cream layer on the sides and sticking it to the pan. Repeat this process many a times.

  • Meanwhile, slice soaked almonds and pistachio-nut or either of it.

  • In between stir the milk gently on occasions to avoid burning of the milk.

  • Avoid too much stirring at frequent interval to get layers.

  • Once the milk reduces to half, then add suager-free natura and cardamom powder, mix well.

  • Cook for 5 mins and add All-purpose flour slurry, Stir.

  • To minimise cooking time add some crushed white bread and mix.

  • Once its get a semi-thickened and reduced to 1/3 of its original quantity switch off the flame.

  • scrape off the entire cream layer as well as dried milk solids and add to the thickened milk. Garnish with almond and pistachio nut slices.

  • Serve chilled and enjoy.
